Indian mustard greens assimilate and metabolize selenium into bioavailable Se compounds, most notable Se- methylselenocysteine (Se-MSC), and other bioavailable selenoamino acids and phytochelatins. Hydroponically grown Indian mustard is also a rich source isothiocyanates, sulfurophanes, and naturally occurring antioxidants.
