Each bag contains 4 oz of organic or wildcrafted echinacea purpurea root from Poland. The plant is Echinacea purpurea, the purple coneflower, known as equinacea in Spanish. One ingredient, nothing added. ROOT, NOT LEAF OR FLOWER: this is the root only. Echinacea is also sold as the aerial parts, the leaf and flower, and they are not interchangeable in the pot. The root is the part that needs simmering. WHICH ECHINACEA THIS IS: Echinacea purpurea. The other two sold are Echinacea angustifolia and Echinacea pallida, different plants with different roots. Shops do not always say which is in the bag. Ours says it on the label. HOW TO BREW IT: this one is simmered rather than steeped, because it is a root. Add 1 teaspoon to 8 fl oz of water, bring it to the boil, then cover and simmer for 10 to 15 minutes. Remove from the heat, strain and drink. TASTE: earthy and clean, with a definite bitterness and a faint tingle on the tongue that echinacea is known for. It takes lemon well. If you want it milder, simmer for 10 minutes rather than 15.
